Salmon Caviar
Salmon caviar is also known as red caviar or pink caviar.
The roe from salmon is not strictly considered caviar and is usually
just referred to as roe. The Japanese preparation is especially popular
and is called Ikura. Ikura is a word originating from Russian and Persian
forms of the word for roe or eggs.
Salmon caviar is known as one of the most popular of the non-sturgeon
caviars. This roe explodes in your mouth and make wonderful hors d'oeuvres
and canapes. Substitutes include smoked salmon roe or trout roe (paler
grains), golden caviar, flying fish roe (tobiko) or caviar (smaller
and darker eggs with a superior quality or the even less expensive lumpfish
roe.
Salmon caviar features large, orange eggs and a bolder flavor than sturgeon
caviar. A popular food pairing is made with pasta and smoked salmon.
Shallots and crème fraiche or sour cream complete the dish.
