Roe

Roe is harvested from fish and other marine animals and eaten as a delicacy around the world. Roe is fully mature ovaries and usually is small and round. It is especially popular in Japan where it is used for many different sushi recipes. It can be processed into caviar by curing it with salt and other preparations.

Tobiko is crunchy orange or red roe from the flying fish. Masago is from smelt. It is like Tobiko but smaller. Ikura is the word for salmon roe. Sujiko is also salmon.

Karasumi is desalinated mullet roe and is a specialty of Nagasaki. Tarako is the name for salted Alaskan pollet roe. There are also many other preparations and specialties around the world.
