Red Caviar
Red caviar is the name for salmon roe. It is known as
being more versatile and far less expensive that its sturgeon counterparts.
It can be paired with bread with butter, potatoes, or onions. It is
also more plentiful than sturgeon.
Red caviar is known for being especially rich in omega-3 fish oils which
have been shown to be good for development in the eyes and the brain.
However, its nutritional content depends largely on the method of extraction.
In Russia, the law states that only wooden implements can be used. Detractors
claim that wood can contaminate the roe.
In Alaska, where most red caviar is extracted in America, they use more
modern techniques. Detractors to this technique claim that the modern
methods rinse away a lot of the naturally occurring vitamins and oils.
