Fresh Caviar
Fresh caviar is one of three main ways caviar can be purchased
retail. Fresh, kosher and semi preserved are the other ways. Fresh,
means that it is salt cured and has a relatively short shelf life. All
varieties of caviar, from American Bluefin to Imperial Golden Ossetra
are available in this preparation.
Fresh caviar is even more expensive than other preparations. Strictly
speaking, no caviar is kosher. Real caviar is the roe of the sturgeon,
which has no scales. There is kosher "caviar" preparation
from salmon roe. Salmon roe is kosher because the salmon fish has scales.
Semi-preserved caviar is pasteurized to have a longer shelf life than
other preparations. Flavor-wise, it is slightly saltier and judged inferior
by the finer palates. Fresh caviar is definitely the most prized way
to eat caviar.
