Caviar
Caviar is the name for the roe or eggs taken from the
sturgeon fish and served with a spoon made of bone or mother-of-pearl.
The world’s most expensive and prized caviar comes from the Caspian
Sea in Russia. Overfishing and pollution have made it even rarer.
Caviar harvested from wild sturgeon include Beluga, Osetra, Sevruga
and Hackleback. Farmed sturgeon types include French Osetra, Italian
Osetra, Russian Osetra, Uruguyan Osetra andf White Sturgeon Osetra.
Non-sturgeon caviar is produced from the American Bowfin, American Pride,
Paddlefish, Salmon roe, Trout roe and Whitefish roe.
Caviar can also be purchased by preparation. It is available fresh,
kosher or halal, or semi prepared. It is served and handled with spoons
made of non-metallic materials because the metallic brings an unwanted
flavor to this luxurious treat.
