The best caviar in the world is known as Imperial (Golden
Ossetra) Caviar or Beluga Caviar from the Caspian Sea. Imperial caviar
is also known as golden oscietre, golden ossetra, shah's caviar, or
royal caviar. Substitutes and alternatives abound for this especially
rare type.
Prices are exorbitant for the best caviar, as much s $500 U.S. for just
one ounce. Prices for caviar have always been very high and caviar itself
is considered a status symbol if you can afford it. In the 21st Century,
prices have become even higher due to the pollution and overfishing
of sturgeon in the Caspian Sea. Responsible vendors ask their patrons
to seek out alternative roe while the Caspian Sea stock recovers.
The greenish-gold best caviar has very large grains and is very rare
and pricey. Substitutes include ossetra caviar (also produced from Caspian
Sea sturgeon), paddlefish caviar (gray, not brown), hackleback caviar
(black, not brown), bowfin caviar (black, not brown), or lumpfish roe
(not as delicate).
